Rice is only cooked for few minutes in the instant pot and chicken does not get enough time to cook thoroughly, especially if its of a big size. Heat oil in pan over medium-high heat. Stir in chicken stock, bay leaves, and remaining ¾ teaspoon salt and bring to a boil. Start by rinsing the rice with water until the water becomes clear.

  1. Combine the chicken and marinade ingredients together in a bowl, cover and rest for a few hours, preferably overnight
  2. Rinse basmati rice 3 times and then soak for 15 minutes and drain water
