Chicken Biryani is a savory chicken and rice dish that includes layers of chicken, rice, and aromatics that are steamed together. The bottom layer of rice absorbs all the chicken juices as it cooks, giving it a tender texture and rich flavor, while the top layer of rice turns out white and fluffy. Wash chicken thighs, for faster cooking make a ½ " slit into chicken thigh meat on either side of the chicken, then wipe with a paper towel. Add chicken to a bowl then add garlic, ginger, white pepper, cumin.

Instructions to make Chicken Biryani:

  1. In a bowl marinate chicken adding curd, turmeric, paprika powder, coriander powder, biryani masala, chopped coriander, 1 bay leaf (do not add salt)
  2. In a vessel add 2tbsp of ghee, star anise,pepper corns & bay leaf
  3. Add water and let boil
  4. Wash 1 cup of rice and add it to the boiled water
  5. Strain the rice once cooked
  6. In a pan add 1tbsp of oil and saute onion adding ½tsp sugar and salt
  7. Saute untill dark in colour. here the barista is ready. Allow it to cool
  8. In a kadai or vessel add in 2tbsp of ghee
  9. Add in 1onion and ginger garlic paste and tomato
  10. Then add in the marinated chicken and mix well
  11. Add in ½ cup of water
  12. Cook it covering with a lid
  13. Once the chicken is cooked, let the gravy thicken
  14. Cut potato into pieces, 1inch each and deep fry and spinkle salt once fried
  15. Layer the rice on the gravy adding fried potatoes, chopped coriander and birista
  16. Serve with curd raita or salad
