Grilling all the veggies makes this a truly grilled guacamole and will impart so much more flavor it will blow your mind! Heat a grill pan to medium heat and place the avocados and jalapenos in the pan cut-side down. Preheat grill or grill pan over medium heat.

To get started with this recipe, we have to prepare a few ingredients. You can have grilled guacamole using 7 ingredients and 4 steps. Here is how you can achieve that.

The ingredients needed to make Grilled Guacamole:

  1. Prepare 2 avocadoes
  2. Take 1 large lime; juiced
  3. Get 2 large pinches of kosher salt
  4. Get 1/2 small yellow onion
  5. Take 3/4 bundle cilantro; chiffonade
  6. Take 1 large tomato; seeded & cut in 4ths
  7. Make ready 1 large jalapeño; seeded & split in half

This Grilled Guacamole would be a perfect side dish for a day of grilling. There's not much that would be better than a big bowl of this and a cold beer. Grill corn until nice and golden, with good grill marks on the kernels. Allow to cool a bit, then cut the kernels off the cobs.

Steps to make Grilled Guacamole:

  1. Cut each avocado in half and remove pit. Remove from skin carefully by running a spoon along the edge.
  2. Dip avocado, tomato, jalapeño, and onion in canola oil. Let excess oil drip off. Grill each side until nice caramelized. Transfer to a bowl.
  3. Cut the onions, tomatoes, and jalapeño to a small dice. Place back in the bowl. Add lime juice, salt, and cilantro.Smash with a potato masher or fork, or use a food processor for a smoother guacamole.
  4. We have been eating avocado everything-avocado ice cream, salsa, and guacamole. My new favorite guacamole is Grilled Guacamole. Grilling the avocados brings out a nice smoky flavor. This guacamole is simple to make using grilled avocado, tomato, green onions, cilantro and lime juice. It is great with tortilla chips, on tacos or fajitas.
