The ingredients needed to make Ridge gourd chutney:

  1. Take 2 cups ridge gourd chopped,(without removing viens)
  2. Prepare 1/2 cup chopped tomato
  3. Make ready 2 1/2 tsp sesame seeds
  4. Make ready 3-4 chopped green chillies / red chillies
  5. Make ready 1 cup chana dal, urad dal
  6. Take 1/2 cumin, sugar, salt, turmarind
  7. Get 2 tbsp oil

Take a pan, add oil, once oil is hot add urad dal and fry till they turn light brown. Ridge Gourd or Beerakaya is a vegetable I haven't seen much in Kottayam. I finally ended up trying this Ridge Gourd chutney with lots of coriander leaves and it came together really quickly and easily. Ridge Gourd Peel Chutney tastes heavenly when mixed with rice along with a dash of til oil.

Instructions to make Ridge gourd chutney:

  1. Dry roast chana dal & urad dal until it golden. Fry red/ green chilli & add cumin to hot pan."1 tblspn oil for fry(opotional)."
  2. To the same pan add oil & fry ridge gourd until they cooked for 10 min. Aside it fo cool.
  3. Fry tomato until mash & add little slice garlic.
  4. Powder the dal & red chilli. Add gourd, tomato, turmaind, salt, 1/2 spn sugar & garlic blend to smooth paste.
  5. "In a pan add 1 tblspn oil add red chilli, cumin, curry leaves, hing. Pour this to chutney… (optional)"

It can also be had along with dosas,idlis,puris, and just about any dish. Ridge gourd, a fiber rich vegetable helps to overcome constipation and also improves immune system. Ridge gourd palya, Sihi and chutney are popular in Udupi out of all other. Ridge gourd chutney is one of the easiest spiced healthy dip made with few ingredients.
