This recipe is made easy by heading over to my local Loblaws to pick up a rotisserie chicken from the Grab and Go section along with refrigerated tortellini and pre-made pesto. Meanwhile, melt butter in a saucepan over medium heat. Pour in heavy cream and chicken broth and mix well. Chicken Alfredo tortellini is rather decadent as an everyday dinner, but for special occasions, it's an indulgent and easy-to-make treat.

Instructions to make Chicken Spinach Alfredo Tortellini:

  1. cut the 3 lemons up into 1/4 and squeeze juice into large bowl. chop up 1-2 cloves of garlic and add to bowl. put the 4 boneless skinless chicken breasts into the bowl with lemon and garlic. add a dash of salt & pepper and let marinade anywhere from 2hrs or overnight.
  2. in a large skillet heat oil. after chicken has marinaded brown chicken breasts in pan until fully cooked and have a golden brown coloring. when cooked set aside
  3. boil a pot of water and salt for tortellini. when at a rapid boil pour tortellini in and let cook for 8-11 mins. when done, drain.
  4. heat another medium skillet with 1-2 cloves of fresh garlic and 2 tablespoons of butter. when heated empty bag of spinach and cook until wilted.
  5. shred chicken and add chicken to skillet of spinach and the 1/2 bottle of Alfredo sauce. cook until heated.
  6. mix tortellini and chicken, spinach, and alfredo sauce together. then serve! (season to taste)

This recipe combines chunks of juicy chicken and tender cheese tortellini in a creamy, Parmesan-loaded, parsley-flecked Alfredo sauce. But the best part is that it pretty much makes itself! Add diced chicken breasts and saute until juices run clear. If using package of Alfredo sauce, mix ingredients for sauce and cook as directed (do while chicken is cooking). (If using fresh Alfredo sauce, set aside until last couple of steps.) Add tortellini, alfredo sauce and fresh grated pepper to chicken. Cook tortellini according to package directions.
