Grate the courgettes/zucchini, chop or mince the garlic, finely chop the chilli and grate the parmesan. Melt the teaspoon of butter in a large frying pan and add the garlic. Cook for a couple of minutes and then add the chilli and courgette/zucchini. Heat a really good slug of olive oil in a large shallow pan with a lid.

  1. Finely chop your garlic and chilli and add to a pan with a little oil.
  2. Grate your courgette and add to the chilli and garlic.
  3. Turn on the heat and sweat gently until softened. Season with salt and pepper.
  4. Cook your linguine in salted water until al dente and add to the courgette mix with a little of the pasta water.
  5. Mix well and add your grated Parmesan until combined. Serve and enjoy.
