  7. Place batter in pan, bake for 30 minutes or until firm. Let cool in pan.
  8. Transfer cake to a plate.
  9. Heat apricot and 1 tablespoon of water in a small saucepan.
  10. Press apricot mix through a sieve and stir in brandy. Drizzle over cake. Top with chocolate shavings.

My mistake turned out a cake that was slightly more of a sponge consistency but still retained the ricotta flavor I perferr the. This ricotta cake is a part of my ricotta cheese recipes collection.
