  13. Prepare 1/4 tsp Orange zest (Optional)
  14. Get 4-5 Tbsp Freshly squeezed orange juice

  2. Sift flour with salt and baking powder. Set aside.

  5. Add orange juice and zest and beat. Then add flour. Set aside.
  6. Clean/Wash your whisk and dry well. Then in a separate bowl, whisk egg whites till frothy, then add a pinch of salt and keep beating till it forms stiff peaks.
  7. Now add, 1/3 of the whites to batter and stir in in with a spatula or wooden spoon. Then add half of the balance whites fold it in, then the remaining whites and mix it all till incorporated. Dont overmix.
  8. Pour batter into baking tin and bake for 25- 30 mins. Cool completely.
  9. Glaze: Sieve icing sugar, add your zest and juice till reaches a drizzling consistency. Then drizzle over cooled cake. Enjoy!!!
