The sweet potato (Ipomoea batatas) is a member of the Convolvulaceae family of flowering plants, which includes the morning glory, chokeweed, and water spinach. The sweet potato has been cultivated for thousands of years for its tuberous roots.

The ingredients needed to make Sweet Potato:

  1. Take INGREDIENTS for 7 Cakes
  2. Take 300 g Sweet Potato
  3. Prepare 90 g Sugar
  4. Get 20 g Butter
  5. Take 60 g Milk
  6. Prepare 60 g Egg Yolk (about 3 egg yolks)

Blend your sweet potatoes into a delicious soup balanced with ginger, coconut and lime. Any potato hash recipe is made better with sweet potatoes, and from there, you can add anything you want. Instructions to make Sweet Potato:

  1. Preheat oven to 350 F.
  2. Wrap the sweet potato with aluminum foil and bake for 60min.
  3. Peel the sweet potato and add to a medium saucepan.
  4. Preheat oven to 400 F.
  5. Line standard muffin tins with paper liners.
  6. Add the sugar, butter and milk to the saucepan. Heat over medium heat until melted.
  7. Add the egg yolk and bring to a boil over medium heat for 5 min or until hardened (see picture).
  8. Divide the batter evenly among the lined cups. Brush the egg yolk (ingredients for exterior) on the tops of the cakes.
  9. Bake for 15 min or until the tops are lightly browned.
