  1. Heat a large frying pan with the canola oil while you prepare the chimichangas.
  2. Spoon 1/2 cup of pulled pork down the center of each tortilla. Top with 1/4 of rice.
  3. Next top with some corn and 1/2 c of the shredded cheese.
  4. Fold the tortilla like you would a burrito. Fry the seam side down first until golden then flip and fry the other side. Enjoy!!
