I used frozen spinach cause it's easier than boiling a bulk of spinach leaves down but you can go either way. Make crepes if using homemade & set aside. Heat the oil in a large skillet Uncover & add the goat cheese, stirring until melted. Spoon mixture down the center of each crepe. The spinach and ricotta combo goes surprisingly well with the crepes.
