A true shepherd's pie is made with lamb while a cottage pie is made with beef. In the US, I notice that it is often called a shepherd's pie when it really is just a cottage pie. Since the type of meat used is the only real difference in this dish, I find most have a version using beef that they call shepherd's pie even if it technically. Adding egg yolks to the mash, which will give the top layer a golden crust, is just one of them.

  2. Peel and slice your potatoes evenly, then place in a sauce pan of boiling water. Add some salt and set a timer for 15mins. In this time you can start on your filling.

  4. Add the Rosemary, Thyme, Garlic, Salt and Pepper, then stir some more. Quickly add your Carrots and Onion and stir a little longer so everything is to a minced consistency.
  5. Stir in the Worcestershire Sauce then add the Tomato Puree and stir for few minutes. Pour in the Chicken Stock and cook for 3 more minutes. By this time your potatoes should be ready.
  6. Take your potatoes out and strain the water off. Put the potatoes into a medium mixing bowl and mash the potatoes with all the mash ingredients.
  7. Scoop the meat mixture into a deep casserole or other oven proof dish and then spoon the mash over the top. Spread the mash over using the bottom of the spoon and sprinkle a generous portion of Parmesan Cheese over the top. Poke the top with a fork several times then stick it in the oven for 18-20 minutes to brown the potatoes and set the pie.

He suggests using Welsh Black Face lamb, a breed noted for its quality. Traditionally, shepherd's pie is made with lamb (hence the name). However, as the dish gained wider popularity outside of its native English homeland (where using beef would make this a cottage pie), beef became a common substitute, especially in America where it's more widely available than ground lamb. Yes, shepherd's pie is predominantly thought of as Irish or British. But since I'm Scottish, I thought I'd give it a unique twist to suit my ancestral tastes.
