Inspired by fried rice, sheet-pan crispy rice is my favorite way to use leftover grains of any kind, which I always seem to have by the bucket-full. Use any cooked grain you have on-hand—the drier, the better—and mix-and-match with whichever elements you like; squash, cauliflower florets, shallots. Cauliflower "Fried Rice" which replaces rice with cauliflower is my favorite low-carb side dish when I'm craving Chinese take-out!

Steps to make Hacked Crispy Rice / Fried Rice (Cauliflower):

  1. Microwave the cauliflower for about six minutes
  2. Pulse in food processor until riced.
  3. Using some paper towels get some of the water out of the rice.
  4. Using about half of the rice, and half of the yogurt… Mix together in bowl.. And prep a pan on the stove at med high heat.
  5. Take the yogurt / rice mix and squish into the bottom of the hot pan with a wooden spoon or the like. It'll sizzle etc.. Depending on your kitchen skills, you can let it brown for about four minutes, then start scraping and mixing the cauliflower. It may require some arm work out, you can stir fry the rice and not let it settle as well.
  6. Eventually it'll all get slightly browned, remove from heat, scrape pan and enjoy. It'll take about 10 minutes or less, don't let it just sit though, unless your seriously going for the burnt crispy on the bottom.
  7. Repeat with the second 8oz of rice and yogurt. More Yogurt may be required, I kinda eyeballed the amount I needed.

This "Cauliflower Fried Rice" is EXCELLENT (chef worthy)! I had imagined so many adaptations to the recipe before I had actually made it (i.e. marinate the meat; switch up the pork for a combination of pork, chicken, and shrimp; add hot pepper sauce and/or fresh grated ginger) but I don't think there is much. Make healthy fried rice right in your own kitchen with this HG food hack! This Low Carb, Grain Free Fried Rice is so legit in taste and texture!
