  15. Prepare As required Mustard oil (amount you need to sauté everything)
  16. Get Note: Keep buttermilk and curd at room temperature for entire night

Karhi was born in the deserts of Rajasthan, where water was scarce and food was mostly milk, yogurt or ghee-based. achaar and chutney. Karhi is a gram flour (besan) and yogurt-based sauce with fritters or pakoras. The Rajasthanis or Marawaris, Gujratis, Sindhis and Punjabis all have their unique. Steps to make Kadhi/Karhi (Without Pakoras):

  1. Chop all the vegetables as shown below. But cut green chillies from middle.
  2. Now in a pan or bowl Blend Buttermilk, curd, turmeric, salt, red chilli powder, black pepper powder, coriander powder, and gram flour together
  3. Now in a pan add Mustard oil. Turn the flame to high. Wait till it changes it colour.Now add Black cardamom and cloves.
  4. Now add green chillies. Then add ginger and garlic let it turn golden brown and then add onions wait for it to turn golden brown.
  5. Now add buttermilk mixture and also same amount of water and mix it really nicely. Let it come to boil and then simmer the flame and let it cook for 2-3 hours but keep stirring in between.
  6. Now your Kadhi is ready. (It should be slightly thick but not to thick). You can serve it with roti or rice.

Deep fried fritters (pakora) are dunked in a yogurt based curry made with besan (gram flour) and spices! I am sharing my absolute favorite way to make the best Punjabi Kadhi Pakora at. Stir very well to make a smooth mixture without lumps. If there are lumps, then break them with a wired whisk. Kadhi or karhi is an Indian dish.
