Steps to make Orissa Special Masala Odia Dalma:

  1. Pour 3 glasses of water in a vessel and heat them. Add 1 bay leaf to it. Then add 1 cup of toor dhal, close the vessel with a lid and allow it to boil for about 15-20 minutes in medium flame.
  2. After 15 minutes, dhal is boiled now start to add the chopped vegetables (carrot, beans, pumpkin, raddish, eggplant, snake gourd) to them. You can also add raw papaya and banana pieces along with the vegetables. Then add 2 teaspoon of finely chopped ginger, 1 and half teaspoon of turmeric powder and salt as needed.
  3. The vegetables get boiled after 15 minutes. Now add 2teaspoon ghee to them. It gives extra aroma to the dhal.
  4. Meanwhile in a kadaai pour 1 teaspoon of oil, add 2 red chillies few mustard seeds and roast them. After a minute put 1 teaspoon cumin seeds, one onion and tomato chopped. Wait until the tomato gets completely roasted.
  5. Now pour the dhal mixture to the kadaai and combine them. Finely add 1/2 teaspoon cumin powder and sprinkle some coriander leaves. Masala Odia dalma is ready to serve hot.
