  1. Firstly, rinse properly the rice and soak it for 15 to 20 minutes.

  3. Add cashewnuts and raisins,stir fry until it is golden brown.It is to be done on medium to low flame as it burns easily.And keep aside.
  4. Now, your karahi is already ready, if required, can add ghee. Then add spices (bay leaf, cinnamon, cardamom,cloves, peppercorns).The flavor of spices is released in the ghee.
  5. Then drain the water from rice.keep aside the drained water. Add rice in the karahi. Mix the rice with the spices and stir fry for 2 to 3 minutes on medium to high heat.
  6. Add water(drained water), turmeric powder, salt,sugar. Cover the rice with a lid and let rice cook on low heat. It would take 10 to 12 minutes to cook.In between check the rice.
  7. The rice is cooked well and water dries out. Switch off the (heat)stove.
  8. Garnish the rice with fried cashewnuts and raisins. Sweet rice ready to serve and eat.
  9. IMPORTANT POINTS: 1)Can also be cooked in pressure cooker (2) half milk half water can also be used for cooking. Milk will add more flavor. (3) Can be eaten with aloo dum or dalma (special dal of orissa mix with several vegetables)
