Steps to make Algerian Makroudh:

  1. Prepare dates dough : clean and mash dates, add 1 tbsp of butter, bit of sesame, 2 tsp cinnamon and 1/2 tsp cloves, knead the dough and let it rest
  2. Prepare semolina dough, mix semolina, salt, sesame and butter,scrub them well with hands then add bit of water and roses water, gather the dough but don't knead it !
  3. Put the dates dough inside the semolina dough and seal the edge, roll it into a 2 cm diameter boudin, use the stamp and the cutter
  4. Bake them on 180 degrees till golden !
  5. Once the get cold, pass them in hot honey with roses water, decorate with sesame

Makroudh also goes great with coffee in the morning so the next chance you get, take the time to enjoy a morning snack before rushing off to. Makroud is a North African pastry eaten in Morocco , Algeria, Tunisia and in some parts of Libya.
