  1. Prepare 250 gm broken harees wheat,soak overnight in warm water.
  2. Get 250 gm boneless chicken thighs

  12. Take 250 ml water
  13. Get 1 ltr hot water

  15. Prepare as needed cheddar cheese for garnishing
  16. Prepare Ingredients for red -chilli vinegar sauce
  17. Prepare 2 tbsp vinegar
  18. Take 3 tsp red chilli paste

This is a quick rice and chicken recipe. It's like a biryani that I like to make on days when I am lazy and need to make something for lunch or dinner. Mandi is very popular in Yemen and Saudi Arabia as well as other Arab Countries. Similar to Kabsa, the main difference is the method of prep.

Steps to make Yemeni chicken harees:

  1. In a medium sized non stick pan heat clarified butter on low heat.
  2. Add cumin seeds, cinnamon stick, whole black pepper,clovesand green cardamom,saute for a minute.
  3. Add garlic and sliced onions.Saute on medium -low heat until onions turn soft and start to brown.
  4. Add chicken pieces and green chillies. Saute until chicken pieces turn white.
  5. Add 250 ml water and stir together. Bring to a boil., turn heat to low, cover with lid and let cook on simmer until chicken is 3/4 cooked through.
  6. Add wheat salt and 1 litre hot water. Stir well. Cover lid, cook on simmer, till the wheat is soft and cooked through and a poridge- like consistency is reached. Remove from heat.
  7. Spoon into a serving bowl or individual bowls.
  8. Sprinkle grated cheese and top with red chilli vinegar paste.
