Steps to make Butter Chicken/Chicken Makhni:

  1. Clean and marinate the chicken pieces with some salt,pepper and a pinch of turmeric.
  2. To make Garam masala-Dry roast cloves,cardamom,star anise,bay leaf,cinnamon stick on medium heat and powder them and keep.
  3. In a large sauce pan, heat some oil and butter.
  4. Shallow fry the marinated chicken pieces until light brown and transfer to a paper towel to absorb the excess oil
  5. In the same oil, pop some cumin seeds,bay leaf and cardamom.
  6. On medium heat,Saute shallots,onions and ginger garlic paste till golden brown. Add some salt for quick browning!
  7. Add green chilies and some turmeric powder. Saute well till the raw taste of onions are gone.
  8. Now add chilly powder,garam masala, pepper and salt as required.
  9. Mix the yogurt into this mixture on low flame. Now add little water to this.
  10. Remove from stove and once cooled,blend this mixture to a fine paste.
  11. Now heat some butter on the pan again on medium heat.
  12. Add the tomato puree and stir for a min.
  13. Pour the blended gravy paste to the tomato puree and stir continuously.
  14. On low flame,add the heavy cream into the gravy and mix well to get a thick creamy consistency.
  15. Now transfer the fried chicken pieces to the gravy and let it simmer another 5 mins.
  16. Serve hot garnished with cilantro and heavy cream.

Very finely mince the Shallot and Yellow Onion in a. Shallow fry chicken skewers on medium low flame until done. Serve skewer with the butter gravy or add chicken to the gravy and mix well, garnish with cream and fenugreek leaves and serve. Tips: If you don't want to add chicken on skewers, directly shallow fry the chicken and add to the gravy. WHY IS IT CALLED BUTTER CHICKEN.
