  1. Take 300 grams frozen squid squares, diamond cut

  1. Start the wok with the oil and add the garlic and ginger, stir for 10 seconds.
  2. Add the cubed zucchini, then the leeks and mushrooms
  3. Mix the oyster sauce with the Water in a small bowl and then add it to the wok, stir some more. - Add a bit more water if needed.
  4. Lastly, add the squares of squid and stir well for about two more minutes and it is done!
  5. The mushrooms have to be rehydrated before adding to the pan. Fresh mushrooms work well too.

I remember we used to make this dish regularly when I was working as a teenager in upstate New York. Stir-fry until the prawns are pink and the squid is cooked. Remove from the pan and set aside. Stir-fry for one minute and remove from the pan. Add a generous splash of ginger syrup and the soy sauce and cook until the volume of liquid has reduced by half.
