Agua de Jamaica which translates as "hibiscus water" is a typical agua fresca to accompany the mid-day meal in Mexico. It is sweet, tart, delicious and really refreshing all at the same time. Agua de Jamaica (pronounced ha-MY-cah) is a hibiscus iced tea drink made from dried hibiscus flowers (or "Flor de Jamaica" in Spanish), water and sugar. The hibiscus tea is very tart and almost has a cranberry-like flavor, which is why it's typically sweetened with sugar.

Steps to make Agua de Jamaica/Jamaica tea:

  1. Remove the calyx or the green part from which the flower is attached to the plant. Also remove the stamen, the part from which the seeds are attached. Wash the petals well and add them in a pot.
  2. Boil the water and once it comes to a boil, pour it over the petals. Or you could also boil them together.
  3. Add the optional ingredients according to your taste and mix them well. Cover the pot and let the colour from the flowers steep into the water. If you are making iced tea, put ice in the bottom of the glass and pour the mixture over it.
  4. Steep for 10 - 12 minutes and strain the tea.
