It just didn't seem fair that my favorite ingredients grew during Delicious soup recipe, Kate! I didn't have any cayene pepper, so I used crushed red pepper flakes instead. I will definitely be using this recipe often! Add the crushed tomatoes (with juices), roasted red peppers (without juices) and the flour paste from the soup pot to a food processor or blender.

Steps to make Crushed Red Pepper, Tomato & Avocado Toast:

  1. Drizzle bread with olive oil then toast the bread
  2. Slice the tomato and avocado thin. Cut the avocado in half and remove the pit. Hold the half of the avocado in one hand and with the other, slice down to the avocado skin but not through it. Don't cut yourself :)
  3. When the bread is toasted arrange the tomato and avocado on the toast. Use your finger to release the avocado from the skin. Really get in there!
  4. Sprinkle with salt and crushed red pepper flakes.
  5. Yum!

Blend until smooth, then return the contents to the soup pot. I haven't quite jumped on the pumpkin train, although, I am eye'n those beauties and am looking forward to Fall flavors.
