Add the chicken and the bay leaves to the pot. Add the water, stir to combine, and cover. I like to avoid frozen shrimp when I can so I am using dry cured ham instead to this delicious jambalaya! Toss the chicken, sausage, ham, vegetables, and seasonings in the slow cooker and forget about it until dinner time. Chicken stock: If the rice needs more liquid as it cooks, feel free to add in more.
