Stir in the cherry tomatoes and sit the halloumi slices on top. Sprinkle over the cumin seeds and chilli flakes, if using. Cut the halloumi into cubes, and scatter across the vegetables, along with the olives and cherry tomatoes. Tray bake: two words that light up any busy person's heart, and especially so with this tasty mix of sweet roasted veg and tasty halloumi, finished with a basil oil and crunchy pumpkin seeds.

Instructions to make Halloumi Traybake:

  1. Preheat the oven to 190C/375F. Quarter the courgette lengthwise, then slice. Place in a big bowl. Peel the onion, cut it in slices or wedges and add to the bowl. Add a tbsp of olive oil, pressed garlic and some spices. Toss to coat the veggies.
  2. Line a large baking sheet with parchment paper. Spread the veggies in an even layer. Put in the oven with the rack in the upper third.
  3. Cut the halloumi into slices and then the slices in half lengthwise to obtain strips. Place on the baking sheet on top of the vegetables. Bake for 13 minutes.
  4. Add cherry tomatoes on top and bake for 10-15 minutes until the halloumi turns golden brown and the cherry tomatoes start to open.
  5. Serve hot. Take a piece of bread, spread some hummus on it and top with the traybake mix.

Baking the halloumi with the veg gives it a golden, crispy top - and saves on washing-up! Spiralise the courgette (or other chosen vegetables), then core and finely slice the apple. Hasselbacking the halloumi opens up more surface area for maximum crispness. Serve this easy traybake with flatbreads and a green salad. Warm, salty halloumi goes brilliantly here with sweet watermelon and fresh mint - ideal for a BBQ side dish..
