Try this vegan Chili Con Carne (or Chili Sin Carne) recipe that's full of flavors, comforting and filling. Traditional Mexican cuisine is a fiesta of flavors As you may already know, chili con carne is a spicy stew made with kidney beans, tomatoes, chili peppers and minced meat, often cooked together with.

Instructions to make Vegan Chilli (sin carne!):

  1. Fry your meat free mince according to packet and set aside
  2. Fry onions, peppers and garlic until liquid is released and evaporated
  3. Add coriander, cumin and oregano to the pan, crumble in stock cube, and cook for a minute
  4. Add mince back to pan and stir until it is all incorporated
  5. Add tomatoes and tomato paste to the meat and veg mixture, then add cold water to the empty carton (I used around half a carton) to get all the tomato-y goodness out!
  6. Bring back to a simmer before adding the beans and the chipotle paste
  7. Bring back to a simmer and add salt and pepper to taste
  8. Simmer for about 10 minutes
  9. Serve with your favourite accompaniments! We made wraps out of ours with veganaise, my easy guacamole, shredded violife cheese and crumbled nachos
