Tameta na Bhajiya are batter fried tomato fritters. Thick slices of tomatoes are layered with spicy chutney , dipped into a chickpea batter and fried. Grind all the chutney ingredients together. Mix flour with turmeric powder, soda, cumin seeds and salt.

Instructions to make Stuffed Paneer Mirch bhajiya and baingan bhajiya:

  1. Take besan, chilli powder, haldi, hing and salt. mix well.
  2. Add water and make a smooth batter.
  3. Also add a pinch of baking soda and mix gently.
  4. For stuffing-take mashed paneer, green chilli, ginger, coriander leaves, carrot, onion and corn
  5. Also add haldi, red chili powder, aamchur, salt and hing.mix well
  6. Now slit green chili at the centre and remove seeds.
  7. Also stuff the paneer stuffing into the chillies.
  8. Dip the stuffed chilli into besan batter, coat and deep fry to golden brown.
  9. For baingan bhajiya-Rinse and slice the baingan (brinjals) thinly.
  10. Dip the baingan slices in the batter evenly.
  11. Gently place them in medium hot oil for frying.
  12. Fry the baingan bhajiya till crisp and evenly golden.
  13. Place the bhajiya on a paper kitchen towel to remove excess oil.
  14. Finally, serve stuffed paneer mirch bhajiya and baingan bhajiya hot with coriander chutney or tomato ketchup.

Add enough water to form a thick batter. Cut paneer lengthwise into two pieces. Sandwich two squares together with chutney.
