This easy one pot jambalaya is made with chicken, shrimp, andouille sausage. The sofrito and spices make this dish particularly delightful. All ingredients come together to make a delicious and filling meal! Jambalaya, on the other hand, is a rice-based dish, usually made in one pot with the rice (any wonder why I love it so much!) The other major difference is that Gumbo typically cooks for at least three hours, where as Jambalaya maybe cooks for an hour tops, and is stirred infrequently, making it less time consuming.

Steps to make One Pot Jambalaya:

  1. Chop bacon into 1 cm pieces and cook. Remove from pan and set aside.
  2. Add butter, onions and celery to bacon grease. Cook for 5 minutes. Add garlic and cooked sausage, cook for 2 minutes constantly stirring.
  3. Add water, canned tomatoes dry rice, 3/4 of the parsley and all spices. Bring all to a boil.
  4. Reduce heat to low simmer and cook for 10-15 minutes or until rice is soft stirring once or twice in between.
  5. Add frozen veg mix (optional) and previously cooked bacon. Cook another 5 minutes on low. Stir, garnish with parsley and serve!
