Making ravioli from scratch is relatively easy to do and is very impressive to your dinner guests. More importantly, ravioli from scratch tastes worlds better than anything you can buy in the store. Basically, you just need to make a simple fresh pasta and then you can stuff it with almost anything―cheese, meat, vegetables, and even fruit! Louis-style toasted ravioli is unique and delicious.

Instructions to make Ravioli:

  1. For spinach stuffing: heat oil in non stick pan, add garlic and green chillies & saute on medium flame for few seconds. Then add onions and saute for about one minute. Then add spinach and salt, mix well and cook for more one minute. Turn off heat, add cheese, mix well and keep aside.
  2. For ravioli : knead a soft dough by adding butter, salt and needed cold water. Divide dough into 24 equal parts and also divide spinach filling in 12 parts.
  3. Roll small circles from two dough portions. Place one portion stiffing on one circle and spread evenly, place another circle over it, press it gently all over circumference using a fork so that they stick properly. Repeat this step & prepare rest of raviolis.
  4. Boil water in broad pan, add oil & salt. Once it starts boiling put 3 ravioli and let it cook on medium heat for 3-5 minutes. Repeat this step and cook rest of raviolis.
  5. For pink gravy: heat the oil in nonstick pan,add onion garlic and saute till it becomes pink on medium heat.
  6. Add tomato puree, salt and cook for few minutes on medium flame. Stir occasionally.
  7. Add sugar, chilli flakes, tomato ketchup, mix well and cook for few more minutes. Stir occasionally.
  8. Add white sauce, mix well, cook for few seconds and turn off heat. Our pink gravy is ready. Keep aside.
  9. How to set for baking: pour & spread pink gravy in baking tray. Place ravioli over it. Cover it with grated cheese and sprinkle red chilli flakes.
  10. Bake it in preheated oven at 200℃ for 15 minutes. Serve hot.
