No cream of mushroom soup nonsense! I like to use Kenji's technique and cook the steaks whole, slicing them just before serving. I know it's not the traditional way of making stroganoff, but searing the meat in large steaks keeps the meat from steaming and overcooking, giving you moister and juicier. This is one of my husband's favorite recipes!

Steps to make Stroganoff, my way:

  1. Boil the pasta.
  2. Brown the beef adding in the Duxelles. Add the spice and herbs to the beef.
  3. Add the Worcestershire sauce, and butter. When the butter is melted add the flour.
  4. Incorporate everything in the skillet stirring often till the flour is cooked, about 5-7 minutes.
  5. Add the broth and stir allow to thicken. Remove from heat adding in the sour cream. Stir in well.
  6. Serve meat mixture over the noodles. I hope you enjoy!!!

I changed almost everything in it, but I followed the basic outline. First of all,stroganoff is the one dish I make for my birthday every year and then I go all out, get the good beef, chop it up and brown it, two or three kinds of mushrooms and cook it like my grandmother and mom did in a slow oven for hours until it was tender and the sour cream sauce was thick and caramelized on top. With its tender chunks of beef coated in a luscious creamy sauce and served over a bed of buttery noodles, it's no wonder Beef Stroganoff is such a hit. With all that flavor, you might assume it's a complicated dish, but it's actually quite the opposite. Being of Norwegian descent, I really don't know how this Russian beef stroganoff came into the family.
